Chef Charlie Trotter has opened his latest venture, Restaurant Charlie, inside of the Venetian Hotels' newest addition, The Palazzo Resort, Hotel and Casino on the famed Las Vegas Strip.

Restaurant Charlie’s culinary focus is to offer the most pristine seafood selections available from around the world. There are also many non-seafood items to select from as well. Restaurant Charlie's cuisine honors the hallmarks of Chef Trotter’s approach towards cuisine – unique flavor combinations, an undying commitment to the absolute purest ingredients with a stern de-emphasis on flavor muting cream and butter. The result is food that simply explodes with flavor.

Restaurant Charlie’s menu is primarily a la carte although there are tasting menu options available as well.

The spacious dining room of Restaurant Charlie features 20 foot tall ceilings and a walk-through wine cellar. The room can accommodate many semi-private and private party group sizes.

For guests who desire a truly unique experience we have created a Kitchen Table Skyloft. Hovering high above the kitchen, the glistening stainless steel and glass Kitchen Table Loft provides a bird’s eye view of the symphony of activity in Chef Trotter's kitchen. Our kitchen table accommodates up to eight guests and offers a spontaneous "tasting" menu. Our Sommeliers will also be more than happy to augment your experience with a customized wine pairing for each of the courses. This table books months in advance so be sure to schedule well ahead.

Finally, Restaurant Charlie features a drinks bar which aligns with Chef Trotter's "seasonal" approach. In addition to the classics, the drinks bar offers two cocktail menu styles: Vintage pre-prohibition classics and modern. Using only the finest ingredients the drink offerings are changed seasonally and truly reflect the skill of our team of mixologists. 

Restaurant Charlie is located on the Casino level of the Palazzo Resort and is open for dinner only seven days a week from 5:00 P.M. – 11:00 P.M
