Charlie Trotter Opens Signature Restaurant, "C," At Mexico's New One&Only Palmilla Resort

Chef Charlie Trotter has developed the signature fine dining restaurant at One&Only Palmilla resort in Los Cabos, Mexico, as part of an extensive $90 million rebuilding and expansion of the historic property. The magnificently resort re-opened in February 2004 as a jewel in the exclusive One&Only collection, a luxury resort brand owned and operated by Kerzner International, which acquired a 50% equity interest in and a long-term management contract for Palmilla resort last year.

Trotter worked in collaboration with Kerzner International Chairman and CEO Sol Kerzner and One&Only Palmilla General Manager Edward Steiner, and renowned designer Adam Tihany to create the luxurious 110-seat oceanfront eatery, which is called simply "C."

C boasts spectacular, panoramic views of the Sea of Cortez and its menu features Charlie Trotter's signature culinary wizardry and Mexico's freshest regional seafood as well as meat and game. There is also a world-class wine list featuring a wide range of vintages designed to pair effortlessly with the cuisine.

C offers guests a variety of dining options including the dinner-only main dining room which showcases two glass-enclosed Wine Rooms, a Private Dining Room, a semi-private Cellar Dining Room and a Chef's Kitchen Table in the show kitchen. The Private Dining Room, seating 10, and invitation-only Chef's Kitchen Table, seating eight, both serve Charlie Trotter's signature "dégustation" menu, offering diners a variety of courses, each paired with individualized wine selections. The outdoor Terrace Bar and Lounge is ideal for a light breakfast, lunch, afternoon snacks and live music in the evening. In addition, all room service for the resort is being provided by Charlie Trotter.

In 2007 Chef Trotter introduced Spa Cuisine to his menu of culinary offerings for the Resort. Guests may enjoy Spa Cuisine at the Spa, at Restaurant C or as part of their in-suite dining options.
