Chef Charlie Trotter is elated to present the jewel in his Las Vegas crown: Bar Charlie.

This intimate, ultra exclusive restaurant is a seafood bar unlike any other. The counter only dining area seats 18 guests and offers a Trotter version of "kaiseki" in that the primary menu offerings are small plates of varied ingredients which are prepared right before your eyes! Imagine everything known about traditional sushi, then add in Chef Trotter’s twists and surprises and there you have it!

Our team of experienced Sushi chefs are able to customize your meal in order to ensure a focus on ingredients which you most desire. Additionally the Sommelier has an extensive list of alcoholic and non alcoholic beverages including wine, sake and digestifs to round out your experience.

Bar Charlie is located on the Casino level of the Palazzo Resort and is open for dinner only seven days a week from 5:00 P.M. – 11:00 P.M
